Ok so this was something I made up this afternoon for lunch. My Husband wanted shrimp with spaghetti so I made him a simpler version of this but when I went to make mine this is what came out! And let me tell you it was delicious!! Tastes like you’re at a fancy italian restaurant but so easy to make!
Marsal Mojito Lime Shrimp Spaghetti with Veggies
- 1 serving Whole Wheat spaghetti
- 1 serving deveined small shrimp
- 2 Tbsp Marsala Cooking Wine
- 1 tbsp Coconut Oil
- 1/2 C. diced Mushrooms
- 1/2 C. Fresh Spinach
- 1 tsp. Minced Garlic
- 1 tsp. Capers(optional)
- 1-2 tsp. Mojito Lime Grill Mates Spice mix
In a pot start cooking your spaghetti. (I cook more than one serving so I can put it in the fridge for other meals so I don’t have to cook more later.)
As its cooking dice up your mushrooms and get the oil melting in your saute pan or a wok would be great for this too!
Once the oil is melted and warm it’s time to add in the mushrooms, spinach and garlic. Saute until the spinach is down and cooked.
next add in the shrimp and sprinkle the mojito lime spice over the top. Saute until the shrimp are cooked.
by this time your noodles should be done drain them and then add one serving into the pan with everything else.
Toss some capers in there and give everything a good mix. Then plate and serve. That’s it you’re done! Super easy, super fast, super delicious.
