Ok so Friday my Husband and I invited my in-laws over for dinner before we went to play games that night. I was planning on making garlic chicken and some alfredo and figured I probably had enough ingredients for the 4 of us. My Mother in law said that sounded great, then a few minutes later she texted me and said my brother in law was at their house and wondered if she could invite him as well. So I figured one more it will be a stretch but I could make it work plus we love having family over so I said no problem. Then a few more minutes passed and she texted me again and said my other brother in law would be home by that time and wondered if he could come. I loved the idea of having everyone over but this meant I had to change my dinner plan.
I went from feeding 6 to 8 and I hadn’t marinated enough chicken for that so I adapted. I had some Lemon pepper chicken hind quarters in the freezer I had bought a while back that would feed everyone and decided to pair it will a quick salad and since I was feeding mostly men I decided to make Carbonara. It has lots of bacon in it so it’s always a male pleaser. Plus this is a dish that goes a long way and comes together rather quickly which was perfect because they were supposed to be over in about an hour and a half.

- 8 Pieces of Thick Cut Bacon
- 1 Small Onion Diced
- 2 tsp Minced Garlic
- 3 Eggs
- 3/4 Cup Fresh Parmesan
- 3/4 Cup Half and Half
- Salt and Pepper
Start by cooking your pasta. I always like to add a little chicken bouillon to the pasta water for flavor. Reserve a little of the water from the noodles when you drain them. Oh and you want these noodles hot so don’t do this too long before you do the rest of the steps.
While the pasta cooking we’ll work on the sauce. Start by cutting your bacon into small pieces and frying in a frying pan until it’s barely starting to crisp up. You don’t want it to crunchy in this dish. When it’s done drain the grease and put the bacon on a paper towel covered plate and set it aside till later.
Now return your pan to the stove and over med-low heat it’s time to brown the onion and garlic. You need to do it low and slow until the onion is all a nice golden brown color.
As it’s cooking in a large bowl mix together the remaining ingredients.
Your pasta should be done now drain it remembering to keep about a cup of the liquid.
Your onions should be done now to. Remove them from the pan and put them on the plate with your bacon. You’re going to need them both here in a minute.
Put your noodles in the pan you were just using for the onions and coat them with the egg/cream mixture. Keep the heat at a med/low and with some tongs toss the noodles and sauce until the sauce starts to thicken and coat the noodles. Now add in the bacon and onion and toss.
That’s it you’re done. I added a little parsley for color to mine. Simple, easy, quick and delicious.
