I have been on a green bean kick for about a month now. I make fresh green beans for lunch we have them with dinner I’m just loving them right now. So instead of the traditional Beef and Broccoli I decided to make beef and green beans. I loved it but if you would rather have beef and broccoli this recipe will work for both.
Beef and Green Beans
- 1 Lb. Sirloin Steak,trimmed of fat and sliced very thin against the grain
- 1 pound Cut fresh Green Beans
- 1-2 tablespoons olive oil
- For Beef Marinade and Sauce
- 1/2 cup low-sodium soy sauce
- 1/4 cup cornstarch
- 3 tablespoons cooking sherry
- 2 tablespoons brown sugar
- 1-2 tsp freshly grated ginger
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- For stir fry sauce
- 1/4 cup beef broth (Low Sodium)
- 1/4 cup oyster sauce
First start by cutting your sirloin. You cut against the grain and cut as thin as you can. You will need a very sharp knife to do this or you’ll go crazy trying to cut all this meat.
Next it’s time to make up your marinade. This is so simple mix all the ingredients and whisk them together. If you’re afraid to use cooking wine then you can substitute:
substitute sherry: for 1/2 cup sherry= 1/4C vinegar +1Tbs sugar + 1/4C. water mix together and use.
Once your marinade is all combine pour half of it over your beef and stir it together with your hands. Put the other half aside until the end. Let it sit while you work on your green beans and it will be ready to go when you’re done.
Now it’s time to wash and trim your green beans. Cut of the ends and cut the beans in half. I didn’t use a whole pound of green beans for this go round because I just bought them and I have plans for them the rest of the week so I didn’t want to take them all but you can use more or less depending on what you like.
In a wok or frying pan pour in the olive oil and get it nice and hot then add in your beans. you want to toss them for about 5 minutes until they are just starting to soften. You may want to add a little salt to them as well.
While they are cooking you can go ahead and get the stir fry sauce ready. Its simple just two ingredients. I just like to get my sauces combine in a bowl so when it’s time to dump them in they are right there and I don’t have to scramble for them while I have a hot wok going.
Once your beans are done place them on a plate and set aside while you start cooking the beef.
In the same pan you just used for the beans spread a single layer of the meat over your pan/wok and let it just brown then turn over and repeat with the other side. This seriously takes hardly any time at all maybe 1-2 min per side if that. If you are like me you don’t have a huge wok to do this in so just do it in batches. I do a layer then pull it to one side and add another layer until it’s cooked.
Once your beef is all browned it’s time to add in the remaining marinade, and the stir fry sauce. Let it all bubble and reduce over medium heat until it gets that nice glossy color to it.
Add in your beans and toss. That’s it it’s done. Pair it with some rice and you have a meal. So good!! So easy!
