OK so I just finished this post and it’s gone…. So you get to see my second version. Not sure what happened to it I had just saved it and the only thing that was left was the last picture i put in and the title. So here we go with round two of this.
Ok so don’t let the term “Stuffed” Scare you away from making this it is really so easy! And goes great with Garlic Green bean which are a favorite of mine!!!
- 2 Large Chicken Breasts Cut in half
- some readymade Pesto (about 1 – 1 1/2 tbs/chicken slice)
- 8 Tbsp Feta Cheese (about 2 tbs/chicken slice)
- 3 Tbsp olive oil
- 1 Tbsp Butter or margarine
- 2 tsp Minced Garlic
- some skewers or toothpicks
Start by preheating your oven to 350.
Now once you have cut chicken in half then cover them with some wax paper and flatten them to about 1/2” thickness. (I like to use a rolling pin to flatten mine but you can use whatever works).
Now once they are all flat it’s time to add in your “stuffing”. Starting with the pesto spread a thin layer over the inside of the chicken, and follow that up with about 2 Tbsp of crumbled feta. (I crumbled my feta a little smaller than it came out so that the chicken would wrap up easier)
Now to Roll the chicken I like to take one end and fold over about 1 inche on it then from the other end fold the chicken over that piece until nice and taught. Then secure with a skewer or some tooth picks. ( I prefer to use a skewer because they are more sturdy. This time I just broke one in half and used 1/2 per chicken piece). Oh and I like to add a little salt and pepper to the chicken before I start cooking it.
Once your chicken is all ready to go it’s time to get it into the skillet. In a skillet heat your oil, butter, and garlic over med/high heat. I started mine at about 7.5 and then as it got hot dropped it to 5.5.
Add the chicken to the skillet and cook about 3 min/side. You want them to slightly brown but not to be cooked all the way through.
Once they are done place them on a baking sheet and put them in the oven for 10 min.
Take them out, remove the skewers and that’s it you’re done. What did I tell ya easy peasy lemon squeezy!
