Parmesan Crusted Chicken

Ok so no fancy plate pictures because I made this for a dinner we had with some friends on Saturday and I didn’t get a chance to take a picture of it plated.  IMG_20151212_172923508

This chicken is sooo easy and super yummy and it only takes a few ingredients which you probably have in your house right now.

Parmesan Crusted Chicken


  • 2-3 large chicken breasts
  • About 1 C. Mayonnaise
  •  2 slices of the cheap .99 white bread
  • 1 tsp Garlic Salt
  • About 1 Tbs. Parsley Flakes
  • 1/4 C. the Green Can of Parmesan
  • 1/2 stick of butter


Preheat your oven to 425

Ok Start by cutting your chicken. I like to cut mine in half like a butterfly cut then quartering them.

After all your chicken is cut it’s time to get your bread crumbs ready. In a blender break up your bread into pieces with your fingers and put it into the blender. Don’t blend it yet.

Add in your Garlic salt, Parsley and Parmesan. Then blend until your have nice fine crumbs. Now I like to dump these onto a paper plate that I can just toss out when I’m done because the coating process is a little messy.

Now that your crumbs are ready it’s time to get your coating station set up.  In small container/bowl dump in your mayonnaise. Now get your chicken and first coat it in mayonnaise.

Now it’s time to put it in the bread crumbs. Coat will and flip over to the other side and coat well.

Now when you get them all coated I like to put them on a cookie sheet covered with cooling racks. This just cooks them more evenly.  (To make an easier clean up you could put parchment paper in the bottom of the cookie sheet to get all the crumbs and juices that fall.

Now once you have them all on the cookie sheet the last step is to add a little spat of butter to the top of each of the pieces of chicken, and put them in the oven. Bake at 425 for 30-45min.  The time depends on how thick your chicken was cut.  so just watch them. I’d check them at about 25 min and see if they are getting nice and golden on the outside. When they reach that nice lightly golden color they are usually cooked through. But you could always check with a meat thermometer.

And that’s it you’re done.  And your family will be amazed at how good this chicken is!!!
